This is the most riveting book I have read about the culinary world. The inner demons that he fought regarding his reputation and restaurants status made me read the first 100 pages 5 times before I could finish the rest. We will dine on his recipes of Ris de Veau roti avec pommes purée et truffles noir, Coquilles St Jacques au jus de persil eat purée de carrot, Confit de veau epaule avec sauce au foie gras and finish with a Fromage trolley. Tonight we toast with Burgundy.

Our cooking classes are held in our commercial kitchen. You will be seated at a counter on countertop stools, so please wear comfortable clothing. Layers are best, the temperature fluctuates often.
